Combine rum, cold brew concentrate, and pineapple juice to transport you to sunshine and warm temperatures. We may be drinking this in May currently, but will likely find us sipping on a Perky Pineapple come to long, cold, dark days of the dead of winter. Grab some Erebus Coffee cold brew concentrate, pineapple juice, and rum and enjoy the start of summer!
- 1 oz overproof rum (we use Plantation OFTD)
- 1 oz pineapple rum (we use Plantation Pineapple)
- 1 oz blackstrap or spiced rum (we had Kraken Black Spiced Rum on hand)
- 2 oz pineapple juice
- 1 oz cold brew concentrate
- 1 oz simple syrup
Combine all the ingredients in a shaker with ice and shake until cold. Strain into a highball over crushed ice and garnish. Garnish and drink umbrella not optional :).
